It’s springtime, so y’all know what THAT means, right?!
If you guessed that it’s the perfect time for Kristina’s obsession with any and all things FRUIT SALSA to return, then give yourself a big old pat on the back, because you are soooooo correct!
I am pretty sure that if the only thing I could make in the summer was fruit salsas to go over different proteins, then my life would still be a very happy (andddddd still varied) place! Because there are literally endless combinations that you can make for salsas. Seriously. I’m sure this summer I will continue to prove my point over and over and over again and you all will probably get really sick of all the fruit salsas that I’m going to be throwing your way.
But guess what…I really don’t care. I mean, I do care, because I love you all, but these fruit salsas are going to happen whether you like it or not! I’m apparently also trying to see how many times I can say fruit salsa before y’all just completely want to punch me in the face. Are we getting close?
I’m sure we’re closer now.
Anywho, got some deliciously ripe and juicy peaches at the store so I figured why not turn them into a salsa (ahem, FRUIT SALSA). And I served it over chicken, because that’s what I happened to have defrosted at the time! It was aweeeesome! There’s just something about the combinations of fruit and protein that I just absolutely love. Makes it taste light, fresh and indulgent all at once! And I find having that sweet and savory combination is honestly so satisfying!
Plus, now that I’m gonna be GETTING INTO WEDDING DRESS SHAPE I’m trying to keep my meals nice and light (those arms aren’t gonna tone themselves, right?!). Alright, if I’m being completely honest, I have noticed that I’m seriously so preoccupied with all the amazing love and well wishes we’ve gotten from our family and friends that I’ve kind of been forgetting to eat. So bad, I know! But I’ve just got wedding on my mind all the time. I’m sure that’ll die down a bit once the initial excitement wears off, but for now, that’s my life (so be really dang happy that I remembered to write up this recipe to begin with!).
But here’s to bride-to-be-brain (kinda like what I imagine pregnancy brain will be like!), savoring the moment, trying not to stress about life, and eating healthy & working out in order to stay sane! Seriously, I don’t know what I would have done this weekend without my morning workouts with Shaun T haha. He’s keeping me semi-normal and as relaxed as I’ll ever get, plus the boost of energy and focus doesn’t hurt either! Thanks Shaun!
But let’s get back on track with this recipe for Peach Salsa before I get distracted looking at my ring again…
I just served mine over grilled chicken with some simple grilled asparagus and it was really such a filling meal! The salsa itself will make enough for 4 servings too, so count each one as 1/2 of a purple container is you’re a 21 Day Fixer with me!
- 2 ripe peaches, diced
- 1/2 jalapeno pepper, seeded and minced
- 1/4 cup chopped cilantro
- Juice from 1 lime
- Sea salt to taste
- Combine all ingredients in a bowl, cover and refrigerate until needed.
- Serve over protein such as grilled chicken, fish or pork!
