Oh Ranch Dressing, my obsession with you will never end! But let’s face it, most Ranch flavored things out there don’t generally scream I’M HEALTHY! At least they don’t scream that at me…do they scream that at you?!
But I’m determined to change that with my Homemade Ranch Seasoning Mix! I’ve literally gotten to the point where I really do put this stuff on EVERYTHING! When I grill up some chicken, I just sprinkle some on there along with a little bit of oil and then I just grill it up, which is perfect for a main dish that literally comes together in 10 minutes. But why stop with just using it to flavor grilled chicken, right?! I had seen a post on Pinterest for an Avocado Ranch Dressing, and my mind connected that all together and thought “mmm that would be awesome over some salmon!“. I mean, salmon in itself is so rich and then you combine it was a thick and creamy Avocado Ranch topping…helloooooo indulgent feeling dinner!
And it couldn’t be easier either, especially if you’re like me and already have a whole batch of Ranch Seasoning pre-mixed and ready to season things with! Because you just mix a couple teaspoons in with the Greek yogurt and mashed up avocado and you’re good to go.
I mean, I don’t know about you all, but simple and easy recipes are a MUST for me during these hot summer days. I would honestly go crazy if I had to make complicated stuff every day when the weather is just waaaaay too nice to be stuck inside. One day when I get to build my absolute dream house, I am totally going to have an intense and awesome full, gourmet kitchen outside! Seriously! Then I will literally have no reason to ever have to come inside at all when the weather is gorgeous. But let’s be realistic, that’s still very far off! So for now, I’ll be very content with simple recipes that come together in a matter of minutes and don’t require anything crazy to make!
And this salmon is definitely one of those! And as always, you can totally use this sauce over pretty much anything else too! You could serve it over Grilled Chicken, you could thin it out with a bit of milk or almond milk and have it as a dressing over a nice big salad, or you could dip veggies in it! Nom nom nom. Endless possibilities, my friends, endless possibilities!
I served mine over salmon, obviously, and as a side I just sauteed up some kale and green beans and it was the perfect amount of food for a nice, filling and still light dinner, which was exactly what I was hoping for!
- 1/2 lb wild caught salmon
- lemon slices
- salt & pepper
- 1/2 cup plain Greek yogurt
- 2 tsp Ranch seasoning mix (see below for my favorite homemade version!)
- 1/2 avocado, mashed
- Season the salmon with salt & pepper. Place lemon slices on top of the salmon and bake at 400 degrees for 12-15 minutes or until salmon is cooked through.
- Meanwhile, in a bowl, combine the Greek yogurt, mashed avocado and ranch seasoning mix.
- When the salmon is done cooking, top with 2 Tbs of the Avocado Ranch topping!
- 2 Tbs dried minced onion
- 1/4 cup dried parsley
- 3 tsp dried dill
- 1 Tbs garlic powder
- 1 Tbs onion powder
- 1 tsp black pepper
- 2 tsp fine sea salt
