Beef, Cabbage & Tomato Soup

Oh, my! This soup is YUMMY! I feel like that transition period between Winter and Spring is perfect soup weather. It’s still hearty enough to be comforting for chilly days that feel more wintery, but it’s light enough for days when the air starts to warm up a bit and you just soak in all the freshness of Spring! But, then again, I say that EVERY season is soup season. Even summer. Soup is just a great year round meal! And this Beef, Cabbage & Tomato soup is certainly no exception to that! It was FANTASTIC! Plus, it’s March, which automatically means that cabbage is going to be on a great sale with St Patrick’s Day right around the corner!

On a side note, this is how much of a food geek I am…I am actually slightly bummed that I won’t be around to cook corned beef, cabbage & potatoes for St Patrick’s Day…but then I remember that I’ll be away for my Bachelorette party with my favorite girls in the whole wide world, so then I feel much better about it. Besides, just means I can look forward to getting a corned beef when they’re on sale AFTER March 17th! Perfect. The frugal side of me is very thrilled by that too!

But I did get my cabbage fix in with this soup! Gosh, it’s seriously sooooo delicious and filling. Like, I almost wish that it wasn’t so filling because I totally just want to chow down on bowl after bowl after bowl of this soup until the entire pot of it is sitting happily in my stomach. Butttttt, that’s probably not the best idea in the whole world, so I’m going to stick with one serving of it. After all, I’ve got a wedding dress to look hotttttt in in just a few weeks! And for my 21 Day Fix friends, man, this soup gives you some serious bang for your buck! The recipe makes enough for 8 servings! Each of which are going to count as 1 red, 1 green anddddd if you add in 1/2 cup of cooked brown rice like I did, you’ll also want to add on a yellow container. I alsoooo ended up sprinkling on 1/2 of a blue container of Parmesan cheese, which was incredible! So if you don’t have other plans for your blue container, go on and throw that in as well!

Beef, Cabbage & Tomato Soup

A hearty soup made from ground beef, shredded cabbage & tomato. You can add cooked brown rice or quinoa to round out the meal as well. Warm, comforting & satisfying!

  • 2 lbs lean, organic ground beef
  • 2 cups diced celery
  • 2 cups diced carrots
  • 1 cup diced onion
  • 1 tsp oil
  • 1/2 large head shredded cabbage about 7-8 cups
  • 64 oz chicken, vegetable or beef stock
  • 28 oz can crushed tomatoes
  • 1 bay leaf
  • Salt & Pepper to taste


  1. Heat a dutch oven or large soup pot over medium heat. Saute ground beef until cooked through (6-8 minutes).

  2. Add oil, carrots, celery & onion to the ground beef ad season with salt. Saute 3-4 minutes more.

  3. Add cabbage & season with more salt & pepper. Then add in the stock, bay leaf & crushed tomatoes.

  4. Cover & simmer for 20-30 minutes or until veggies are tender. Remove bay leaf & season to taste

  5. If desired, pour soup over pre-cooked brown rice or quinoa & top with freshly grated Parmesan cheese
