Creamy Cider Vinaigrette

I don’t know why there would ever be a need for a bottled salad dressing when it’s so darn simple to make your own. I mean, don’t get me wrong, I realize that the premade dressings are super convenient and you can just grab one and not have to worry about making another thing, but I’m telling ya…homemade is totally the way to go! It takes 2 minutes to whip up a batch and it’s just so much more flavorful than any store bought kind. Plus, you can feel awesome knowing that there’s no weird ingredients in it!

Take this Creamy Cider Vinaigrette for instance…all it is is plain Greek yogurt, honey, apple cider vinegar, olive oil and some chives! Personally, I’ve yet to find a dressing at a store with that few ingredients…but if you find one or know of a brand, definitely leave it for me in the comments because I’d love to check it out!! But you really don’t need any more ingredients than those 5 because this dressing has soooooo much flavor! I mean, seriously, is there anything that plain Greek yogurt CAN’T do?! It’s literally my life saver and probably incorporated in at least half of the recipes on this blog! I’m just addicted to how versatile it is!

Another quick note on this dressing…I use Bragg’s Organic Apple Cider Vinegar, the kind with the ‘mother’ in it that appears a little cloudy when you shake it up! It’s gotten really popular lately since all the health benefits of apple cider vinegar have started circulating around the internet, so you should honestly be able to find it at any major grocery store and, of course, any health food stores. I use this kind not only for the added health benefits, but because I find the flavor to be more apple-y and less vinegar-y than traditional, processed apple cider vinegars! And let’s face it, no one wants to feel like they’re eating straight up vinegar on their salad…am I right?! And this dressing definitely does NOT taste like vinegar. The richness of the Greek yogurt really does balance out the vinegar, plus the oil tones it down as well. It’s also really smooth! You just want to make sure you whisk it long enough. The first time I made it, I was worried I would never get the little lumps out, but just keep whisking for a few minutes and I promise you that it will all blend together.

Of course, this is also 21 Day Fix friendly! I counted it as an orange container (so I used a 2 Tbs serving size!). But it’s great over a simple side salad or an entree salad as well! Really, I can see myself using this dressing for so many different things, maybe even as a quick marinade! Nom nom nom. But I’ll stop rambling about how awesome it is and just get ya to the recipe so that you can make it for yourself!

Creamy Cider Vinaigrette

A simple Greek yogurt & apple cider vinegar based dressing.

Ingredients

  • 2 tsp honey
  • 1 Tbs olive oil
  • 2 Tbs apple cider vinegar
  • 2 Tbs plain Greek yogurt
  • 1/2 tsp dried chives

Instructions

  1. Whisk all ingredients together in a bowl until smooth and well combined (about 3-4 minutes of whisking)
