Ooooh, spring weather, where are you?! We had such a mild winter and towards the end of February/beginning of March, it was like 70 degrees and sunny and I was outside in a short sleeved shirt just basking in the sunshine…and now it’s almost April and it’s chillyyyyyy and dreary! I mean, I really cannot complain at all since in 2 weeks I’ll be on the beautiful beaches of Punta Cana getting married to my best friendddddd! Which, going off of that, I feel bad that I’ve been a bit more MIA than usual with getting new posts up quickly, but life has been a tad bit crazy trying to get everything done before we leave! We’ve still been eating plenty of awesome and delicious food; I just don’t always have time to take nice pictures of it! But no worries, I’ve got some yumminess coming your way!
I just want to be outside grilling every single day! Like, come on now Mother Nature, play nice! This girl is craving warm weather flavors and I’m not letting anything get in my way! Hence this incredibly delicious Cucumber, Avocado & Red Onion Salsa that I whipped up for dinner the other day! It was soooooooo yummy and I’m seriously obsessed with it. I served it over some simple roasted salmon that I had seasoned with sea salt, pepper & some smoked paprika and the mellow flavors of the salsa paired PERFECTLY with it.
You’re getting a double dose of healthy fats from the salmon and the avocado, so while this meal is very light, it is also extremely filling and satisfying as well! That’s my kind of meal! But for real, is there anything more wonderful than a perfectly ripe avocado? Just soft enough without having any brown spots…yup, I had a perfect avocado for this recipe and I couldn’t have been happier about that because it seriously makes all the difference! And the creaminess of the avocado was delicious with the crunch of the cucumber and minced red onion in this salsa. The flavors are all so light, but so darn tasty together!
Plus, I mean, could this plate get any more colorful?! I looooooove colorful plates because it means I’m getting a huge variety of nutrients making their way into my body! That’s probably why I’m so obsessed with the 21 Day Fix…I focus on eating COLORS, not calories! And this meal was a 21 Day Fix approved one for sure! The salsa itself makes 2 servings, each of them would count as 1 blue, and if you want you can also count it as 1/4 of green, but I’ll be honest and tell ya that I didn’t even bother to do that! My personal philosophy is that you can NEVER get enough green containers! So I look at my green container counts as a minimum, rather than a maximum! Then the salmon was 1 red container, the brown rice was a yellow and the roasted veggies were 1 green and 1 tsp for the oil I used to roast them!
But seriously, go try this light, refreshing and deliciously satisfying recipe for yourself! You will be so happy you did and then you can thank me for how simple it was once you’re done!
Cucumber, Avocado & Red Onion Salsa
A light & refreshing homemade salsa. Perfect over roasted salmon!
- 1/2 cup chopped cucumber
- 2 Tbs minced red onion
- 2 Tbs freshly chopped cilantro
- 1/2 avocado, diced
- 1/2 Juice of 1/2 lime
- Sea salt
Combine all ingredients in a bowl and mix. Season with sea salt to taste.
