Guys, Nick is OBSESSED with Honey Mustard. Like, I think he’d eat it on everyyyyything if he could. Bowls full of it in fact. And I’m a huge fan of it too! Whether we dip some grilled chicken in it or use it as a dressing like we did on this Kale salad! And the best part if, you probably already have everything you need in order to make this…and no funky ingredients that you would find in a pre made brand! I mean, when things are THIS easy to make, there’s really never a need to get a store bought version. 3 ingredients people, that is all! Mustard, honey and mayonnaise or plain Greek yogurt, whichever you prefer! Then you can season it with salt & pepper as well.
You can actually play around with different kinds of mustard too depending on what you’re going to use the Honey Mustard for! I used just plain, old yellow mustard, but you can really use anything! Dijon, whole grain, spicy brown, flavored! Seriously, whatever you want! I used to have a really cool flavored mustard that was flavored with thyme and champagne vinegar. It was awesome and would have been killer to use in this recipe. But I’m encouraging you to get creative here!
And as far as the salad goes?! It’s soooooo good! I ended up topping my portion with some simple grilled chicken and roasted sunflower seeds to round out the meal. But it was so filling and satisfying. The trick is to massage your kale. Yes, massage your kale. I know that probably sounds weird, but it makes a huge difference. If you’ve ever had raw kale before, you know that the leaves can be pretty tough, right? But taking a few minutes to massage them (just as you would knead bread) will tenderize them and make them much more edible in their raw form! I added a small amount of sea salt and then went to town and even Nick was able to notice a big difference! Plus, massaging the kale will make it a darker, prettier green as well! And the grapes add such a wonderful pop of sweetness, which I always aim to have in a salad. It just makes it so much more balanced. Plus, the quinoa adds some protein and healthy carbs to the dish to really round it out! Quinoa is one of those ingredients that I’m totally obsessed with because you can enjoy it warm or chilled. I used it chilled in this dish and it just soaked up all the honey mustard-y goodness. YUM!

Kale, Grape & Quinoa w/ Honey Mustard Dressing
A hearty Kale salad with sliced grapes, chilled quinoa and a simple honey mustard dressing
For the Honey Mustard Dressing
- 2 tsp plain Greek yogurt or mayonaisse
- 1 Tbs honey
- 2 Tbs mustard
For the Salad
- 8 oz torn kale leaves massaged
- 2 cups sliced grapes
- 1 cup cooked & chilled quinoa
Whisk together all of the dressing ingredients until well combined
Layer the salad ingredients in a large bowl. Top with the dressing & toss to combine.
