There was one time, many many many months ago, when Nick & I were innocently strolling our way through Costco one afternoon, grabbing a couple of things that we needed from there, and THAT’S when it happened…
BOOM. The sample people got us. I mean, let me rephrase that, they get us almost every single freaking time, but this time in particular, they introduced me to one of my all time favorite snacks in this whole entire world and then they rudely ripped it away from me shortly thereafter. They were giving away samples of this amazingly delicious, FRESH, Tomatilla Salsa. I forget what brand it was, but it was amazing. We got a ginormous Costco sized tub of it from the fridge (yup, it was the refrigerated kind, so extra super fresh) and I devoured that stuff. I mean, devoured. So we went back the next week and got more, and I carelessly used it up super quickly all over again, not understanding what a sacred and precious gift I had.
Because the next time we went back to Costco so that I could get more Tomatillo Salsa, there was none. Nor was there any the time we went after that, or the time after that…in fact, they’ve NEVER had that salsa again. My heart was broken. I was addicted to the stuff and couldn’t get any! It was devastating and yes, I was traumatized. Buttttttt, life must go on. And so I tried to find other salsa verdes that I loved. But I was trying mostly jarred ones and they just were not cutting it for me. Why I didn’t think to make my own sooner still baffles me since my normal response to wanting a specific food is to make it my own damn self. But it took me this long to decide that I wanted to make my own batch of Tomatillo Salsa (aka Salsa Verde), but man it was worth the wait. Because this is absolutely delicious!
I served mine over some simple Ranch Grilled Chicken and it made a phenomenal 21 Day Fix friendly meal! Ooooh, and along with this salsa, I found my new favorite way to use a yellow container for the Portion Fix! I did half quinoa, half corn! Nom nom nom. The sweetness from the corn was so good with the quinoa and I really think I’m gonna be having that combo way more often. So overall, this entire meal was a huge hit with both Nick & myself. Nick even asked if we could grill up some more chicken so that he could take the leftover salsa into work with him! #victory. Oh and 21 Day Fix serving wise, you can just fill up your green container with this salsa and count it as that! I used about 1/2 of a green container and it was plenty!
A simple Salsa Verde recipe made right in the food processor! Fresh, delicious & healthy with no oil or sugar added!
- 1 1/2 cups Tomatillos (about 6 small)
- 1/4 cup chopped red onion
- 1/2 jalapeno diced
- 2 cloves garlic chopped
- 1/2 cup cilantro
- 1 lime (juice of)
- 1/8 tsp sea salt
Combine all ingredients in a food processor and pulse until desired consistency is reached!
