Holy yumminess! Oh my God, I didn’t realize I was missing this recipe so much in my life until I came up with it…and trust me, you’re missing out on it too so you need to make this ASAP! I mean, I’m a biiiig sweet potato fan! I never used to eat them very much until Nick & I ate Paleo for a few months a couple years ago, and since those are one of the only starchy options you can have, I definitely had my fair share of them! And even though this particular recipe isn’t Paleo friendly (the cheese), it isssssss 21 Day Fix approved, and that’s all I care about!
Seriously though, this is so freaking indulgent tasting and Nick & I never wanted to stop eating it. But no worries, the portion you get of this is super filling, so you might not want to stop eating, but your tummy will be happy even when you run out! I promiseeeee. But honestly, not sure why I ever thought to pair all of these flavors together, but they all complement each other so perfectly! Definitely giving myself a little pat on my back for this one haha.
Plus, can we just take a quick second to admire how beautiful bubbly and golden the Gorgonzola cheese gets after you cook it?! I’m drooling right now and seriously questioning myself as to why I don’t have any sweet potatoes left in my house right now so that I can go ahead and make another batch of this epic side dish.
I’m going to keep this post short and sweet and get you to the recipe in just a second (because, you know, it’s wedding crunch time and I have a bajillion things to get done!)! A couple tips first though…I used mashed sweet potatoes and leeks that were still warm, so it cut down on my cooking time. If you want to prep ahead of time, go ahead and cook the sweet potatoes & leeks ahead of time, refrigerate them and reheat them in the microwave before you bake this dish off with the cheese, otherwise the cooking time will increase a lot and I would worry the cheese would burn before the potatoes & leeks got warm again! But 21 Day Fix counts for a serving of this would be 1 yellow, 1 blue, 1/2 of a green and 1 tsp! Simple enough, right?!
Leek & Gorgonzola Topped Sweet Potatoes
Mashed sweet potatoes, topped with melted, sauteed leeks & bubbly Gorgonzola cheese. An indulgent, but still 21 Day Fix approved side dish that will definitely be the star of the show!
- 2 leeks, thinly sliced, washed & dried
- 2 tsp coconut oil or grass fed butter
- 1 cup mashed sweet potatoes (warm)
- 1/2 cup crumbled Gorgonzola cheese
- Salt & pepper to taste
In a saute pan, heat the oil over medium heat and add in the leeks. Saute until tender. Meanwhile, season the sweet potatoes to taste with salt & pepper.
Spread the sweet potatoes in the bottom of a small baking dish. Top with the cooked leeks and then the crumbled Gorgonzola cheese.
Bake at 400 degrees for about 15 minutes, or until cheese is bubbly and beginning to brown slightly.
