You all know how much I love bringing you new, awesomely delicious & healthy recipes, right?! I hope you know! But I’ve gotta be honest, the reason I haven’t been posting since we got home is because I really haven’t been coming up with anything new. I wanted to keep it simple to really ease back into being home (and, you know, having to wash my own dishesssss) so I’ve been sticking with making a lot of tried & true recipes that are already up here on the blog, so I haven’t had any new content to share with you in a while! But I promise that is all going to be changing from here on out as I’ve slowly gotten my groove back and am ready to get back to experimenting in the kitchen…WIFEY style, of course!
And first up is a mix of something old and something new…just not borrowed or blue…hahaha sorryyyyy, lame wedding joke, I know! But in my defense, we’ve got our I Do BBQ coming up in less than 2 weeks, so I’m kinda still in wedding mode! But this recipe uses my Tzatziki recipe that I’ve been using for a while and just gives ya a different use for it! So it makes sense that I chose this recipe to make since I’m still easing back into coming up with new and creative recipes.
But since we’ve gotten back to the good old, USA, I’ve been really dialing in my nutrition and doing my best to stick to the 21 Day Fix guidelines…which was super simple to dive right back into. But naturally, this recipe is gonna adhere to those guidelines for all of you who follow along too! I counted this bowl as 1 red (chicken), 1 green (veggies) 1 yellow (brown rice), 1/2 blue (feta) and 1 orange (Tzatziki).
And can I just say, this seriously is freaking delicious? Like, the tzatziki is just the perfect sauce to really tie this all together. After taking this picture I mixed everything up so that it was all coated in the sauce and mmmmmm, so yummy! Nick & I both devoured ours and had very happy little tummies! And your tummy will be happy too once you make this recipe! Feel free to sub out any veggies that your little heart desires…all would be delicious and yummy I’m sure!
Chicken Tzatziki Bowls
Brown Rice, Grilled Chicken & Veggies, topped with a dollop of homemade Tzatziki sauce & crumbled feta cheese
Tzatziki Sauce (makes about 3/4 cup)
- 1/2 cup plain Greek yogurt
- 1/3 cup minced cucumber
- 3-5 fresh mint leaves, finely minced
- 3 fresh basil leaves, finely minced
- 1/8 tsp garlic powder
- 1/2 Tbs lemon juice
For the Bowls (per bowl)
- 1/2 cup cooked brown rice
- 4 oz cooked chicken breast
- 1 cup roasted veggies of choice (I used squash & tomato)
- 2 Tbs crumbled feta cheese
In a bowl, mix together all of the Tzatziki ingredients. Cover and refrigerate until needed.
When ready to serve, layer the brown rice, chicken and vegetables in a bowl. Top with about 2-3 Tbs of the Tzatziki sauce and 2 Tbs of crumbled feta cheese. Serve hot,
