Oh my wordddddd! This soup is AMAZING! Like, I cannot believe I haven’t made this for the blog before. Sometimes, I still manage to blow my own damn mind with how ridiculously amazing the simplest of recipes can turn out! And, I mean, I know it’s summertime and the weather is hot (aka, not exactly soup season), but this Chicken Taco Soup is so light and refreshing that it is honestly perfect year round! You will be wanting to add this to your menu plan very soon, friends!
The base of the soup is just plain, old chicken stock, but by adding in a bit of canned tomato, fresh cilantro, lime juice & cumin, you’ve got something that is completely different from traditional chicken soup! Guys, I seriously could have eaten bowls upon bowls upon bowls of this and not gotten bored of it! I honestly think the most fun part about it is that you can switch up the toppings to really suit your taste! Anything you would normally put on tacos is fair game for topping this soup! I went with some shredded cheese, avocado and crumbled up plantain chips instead of tortillas. But you can expand on those choices and do whatever makes you happy! Salsa, plain Greek yogurt (in place of sour cream), shredded lettuce, chopped fresh tomato, scallions, jalapeno…let your imagination run wild, friends!
This Chicken Taco Soup is soooo filling too. The double hit of protein from both the shredded chicken and the black beans in this recipe really help to bulk it up and leave your tummy a very happy camper! You could totally make a vegetarian version of this soup though and omit the chicken completely and just use extra black beans and swap out the chicken stock for veggie stock! I used pre cooked chicken that I simply shredded up and added to the soup to make my life really easy…you can go for rotisserie chicken as well, but I personally love cooking up chicken breast in my crock pot with some salt, pepper, garlic & onion powder and a little bit of chicken stock and then freezing it in freezer bags so that I can have it on hand to use in recipes like this! Plus, cooking the chicken in the slow cooker makes it so melt in your mouth tender…and no one really wants to chew their soup, right?!
Chicken Taco Soup
A healthy Chicken Taco inspired soup that is light & refreshing while still being satisfying!
- 1 tsp oil (coconut or olive)
- 1/2 red onion, minced
- 3 cloves garlic, minced
- 1/2 cup canned tomatoes (chopped or puree)
- 3 cups chicken stock
- Juice of 2 limes
- 1 cup freshly chopped cilantro
- 1/2 tsp cumin
- 1 cup black beans, rinsed & drained
- 1.5 cups shredded, cooked chicken
- Sea salt
- Toppings: crushed plantain chips, plain Greek yogurt, avocado, shredded cheese, chopped tomato, etc
In a pot, heat the oil over medium heat. Saute the onion & garlic for 2-3 minutes or until softened.
Add in all remaining ingredients except the toppings and bring to a simmer. Cook for about 5 minutes, taste & season with salt and more cumin if desired.
Divide into bowls and garnish with toppings of choice.
