Southwestern Chicken Salad

This Southwestern Chicken Salad is the bombbbbbb. For real. Y’all know I posted my Poblano Lime Dressing recipe the other day (or maybe you don’t already know that, in which case, you can find it right here!) and I posted some pictures in that blog post of the Southwestern Chicken Salad that I served the Poblano Lime Dressing over. Well, don’t worry, I was never gonna leave you hanging about the salad! I’ve got the recipe for that coming your way too and it is amazeeeeeballs.

The real star of the show, besides the tangy, spicy dressing, is the smoky southwestern seasoning that I used to flavor the chicken. I wanted the chicken to have some serious kick to it and so I knew I needed to bust out all of my favorite, pungent spices in order to achieve just that. Between the chili, smoked paprika and other aromatics, this chicken was so ridiculously flavorful! And it was absolutely perfect on top of this entree salad!

Nick & I are determined to start seeing some serious results in our health & fitness game since admittedly we’ve both slacked off a bit these last few months. It’s not that we weren’t eating healthy or working out at all, it’s just that it wasn’t consistent with all the traveling and parties. And while we still have our fair share of summertime happenings going on over the next couple months, we are both determined to push our excuses to the side and work on hitting our goals together. We will NOT allow each other to get complacent. And so even when we don’t feel like working out or cooking up a healthy meal, our goal is to push each other to stay on track…#powercouple for real, am I right?! But for real, Nick is the real MVP for dealing with me when I’m going through carb withdrawals, so shout out to my hubby for that one.

This salad is one of those meals that just makes you feel good about eating it. It’s satisfying & filling, but light & healthy at the same time. And just sooooo full of flavor. Your taste buds are going to very much thank you for whipping up your own version of this Southwestern Chicken Salad.

Southwestern Chicken Salad

21 Day Fix friendly entree salad with smoky chicken, black beans, corn, avocado & a spicy Poblano Lime Dressing

For the Southwestern Chicken

  • 1/4 lb boneless, skinless chicken, cubed
  • 2 tsp salt
  • 1/2 tsp onion powder
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp coconut oil

For the Salad

  • 2 cups Chopped Romaine Lettuce
  • 1/4 cup Corn Kernels
  • 1/4 cup black beans
  • 1/4 of an avocado, thinly sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced red onion
  • 2 Tbs Poblano Lime Dressing (see note)


  1. In a bowl, mix together the salt, chili powder, onion powder, garlic powder, cumin & smoked paprika.

  2. Season the chicken liberally with the spice mixture (you will have leftover!)

  3. In a pan, heat the coconut oil over medium heat. Once hot, add the chicken and sautee until heated through (5-7 minutes depending on how large you cut your chicken)

  4. On a large plate or bowl, layer the chopped lettuce, tomatoes, red onion, corn, beans & avocado. Top with the Southwestern Chicken and drizzle with the Poblano Lime Dressing
