Cucumber Dill Chicken

Oh cucumber & dill, I could wax poetic about how much I’m in love with this flavor combo. It’s just so cooling and refreshing and marvelous. But you get the point, right? And trust me when I say, that as a topper for chicken, it is simple and perfect! Like, meals just don’t get lighter & more summery than this. Trusttttt me.

Literally guys, the topping is 3 ingredients. 4 if you want to count salt as an ingredient, but to be honest, I didn’t even add salt to mine because I didn’t feel like it needed it, so that’s entirely up to you. But 3 ingredients…how many combinations of 3 ingredients can you think of that create this delicious of a flavor? Right now, I can’t think of any others, but to be fair to other simple combos out there, my brain is totally shot right now and I’m lucky that I remember my own name, sooooooo I might be a bit biased. I know y’all will forgive me though.

But for real, if you’re looking for a healthy & savory protein packed snack to have during the day, mix up some plain Greek yogurt or cottage cheese with cucumbers & fresh dill and dig in! I actually suggest mixing it up a day or even more before so that the flavors can all meld together! I made this Cucumber Dill sauce a few days ahead of time as part of my meal prep and it definitely got even better as it sat in the fridge.

And you already knew it had to be 21 Day Fix friendly! Since it’s really just a Greek yogurt base, I just count this as a red along with the chicken I put it over with! There’s only 1/3 cup of Greek yogurt total and this is going to give you 2 or even 3 servings, so it really breaks down to a negligible amount per serving! But let’s stop our chit chatting and focus on getting you guys this recipe, shall we?

Cucumber Dill Chicken

Chicken topped with a light & refreshing Cucumber Dill Yogurt sauce

Ingredients

  • 1/3 cup plain Greek yogurt
  • 1/2 cup minced cucumber
  • 1/4 cup freshly chopped dill
  • sea salt to taste
  • 2 pieces cooked boneless, skinless chicken

Instructions

  1. In a bowl, mix together the Greek yogurt, cucumber, dill & season with salt to taste. Refrigerate until needed.

  2. Top cooked chicken with Cucumber Dill yogurt to serve
