Lemon Dijon Carrot Salad

I looooove carrots! I really do. They are super versatile, and in the grand scheme of things they are an awesome way to get more veggies in your life! Think about it, they’re super versatile because they’re delicious raw or cooked, they’re pretty hardy, so they last a decent amount of time in your fridge and it also makes them super filling as far as a vegetable goes, and they’re naturally sweet! On a side note, they’re also one of Gavin’s favorite treats, so there’s always that. But getting back on track, there are tons of things you can do with carrots and I’m here to supply you with one new idea with this Lemon Dijon Carrot Salad. This recipe is so ridiculously simple that just by reading the name, you can pretty much tell exactly what’s in it!

Yup, you guessed it, this salad is really just shredded carrots (and some sliced scallions) tossed with a simple dressing of lemon juice, Dijon mustard and a little bit of honey! Then I just seasoned it with salt & pepper and it was good to go! It’s really a perfect summertime side dish since it’s light, refreshing and served cold for those hot & humid days where you can’t even contemplate turning on the oven to roast anything…heck, you don’t even have to sweat over a hot grill for this one. It’s ready for ya right out of the fridge (ahhh, your nice, cool fridge…I’m a little excessively warm while writing this post, probably time to head inside and turn on the air conditioning!) and is absolutely delicious.

Plus, what I really love is that I didn’t have to add any oil or anything to it! Just a few simple ingredients that are tasty & filling, but super healthy! Not that the good kinds of oil aren’t healthy, they ARE, but now I get to save my teaspoons and my orange container for the 21 Day Fix & use them on something else…peanut butter, perhaps?

Anyways, obviously this carrot salad is 21 Day Fix friendly! Just fill up your green container and call it a day! So it really is an awesome way to get in an extra green container if you find that you struggle to finish all of those up each day! I know that there are definitely days where I do. To be honest, I feel slightly ridiculous even labeling this Carrot Salad as a recipe because it’s so darn simple, but here goes nothing!

Lemon Dijon Carrot Salad

A light & refreshing salad of grated carrots tossed in a lemon-dijon dressing.

Ingredients

  • 2 cups grated carrots
  • 2 scallions, thinly sliced
  • Juice of 1/2 lemon
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt & Pepper

Instructions

  1. Mix together the grated carrots & sliced scallions in a bowl.

  2. In another small bowl, whisk together the mustard, honey & lemon juice. Pour over the carrot & scallions and toss to evenly coat. Season with salt & pepper to taste and serve.
