Poblano Peach Salmon

Guysssss, I feel like it’s been forever since I posted a new recipe on here…I’m sorryyyyyy! But I’m trying my best to keep coming up with new recipes to share with you guys, I promise. Life just got a bit crazy with starting a new job & getting used to those new hours. And I’ve also been doing a round of Shift Shop (which, if you read my last post, you already knew!), and it’s been going amazing! I only have a couple days left of it. But I had decided to keep my meals really simple & stick with recipes that I’d already made in the past in order to help keep myself on track with the nutrition aspect of the program. And while that worked out really well for helping me stick with the meal plan, it didn’t exactly make for any time to create any new recipes for you guys! But now that my first round of Shift Shop is almost over, I’m ready to start getting more creative again in my kitchen…so I’m backkkkkk at it, friends!

And first, I’m bringing you this super simple Poblano Peach Salmon that you MUST try soon while peaches are still in season! In fact, I grabbed a basket of the most amazing, juiciest peaches ever when I went to our local farmstand last week…there is nothing better than fruit that is super ripe! And now is the perfect time of year for all sorts of fresh produce that is at its peak! I absolutely love it!

So long story short, I had already roasted up some Poblano peppers for a different recipe, so I had some just hanging out in my refrigerator that needed to get used. And you all probably already know that I looooove the combination of sweet & slightly spicy, so I decided to combine the two together! And this recipe seriously could not be any simpler. You use half of the ingredients to make a marinade and the other half turns into a quick, simple fruit salsa that you use to garnish the salmon once its done cooking!

Of course it’s also approved on my meal plan! I counted this meal as 1 red (for the salmon), 1/2 purple (for the peach) and 1 tsp (for the oil). As my side dishes, I served it with roasted broccoli and some Cauliflower ‘Potato’ Salad, since for the last week of Shift Shop, I don’t get any yellow containers! So those count as 2 of my green containers for the day! And on a side note, I’ve been LOVING having more green containers throughout the day and really pushing myself to eat more vegetables. Especially since it’s summer and everything is so fresh & tasty!

Poblano Peach Salmon

A sweet& Spicy marinated salmon topped with a Poblano & Peach Salsa for a perfect summertime meal

  • 1 large peach, chopped
  • 1 Poblano pepper, roasted & chopped
  • 2 tsp olive oil
  • Juice of 1/2 lime
  • salt & pepper to taste
  • 1/2 lb salmon


  1. In a bowl or blender, combine the oil, half of the peach & half of the chopped Poblano. Puree until smooth and season to taste with salt. Pour the mixture over the salmon and allow to marinate up to 8 hours.

  2. Combine the remaining chopped peach & Poblano in a bowl & squeeze the lime juice on top. Mix well & season with salt. Refrigerate until needed.

  3. When ready to cook salmon, preheat oven to 400 degrees. Season salt with salt & pepper and place on a nonstick baking sheet. Roast for 10-12 minutes or until salmon is cooked through.

  4. Top with the peach & Poblano salsa and serve.

    How have you liked Shift Shop? I’ve heard it’s intense so I’m nervous!

    1. I actually really enjoyed it! It is DEFINITELY a challenge, but I almost think it’s more of a mental one, so I had a lot of fun ‘conquering’ it!! I thought I was going to struggle a lot with the meal plan, but I actually feel amazing after doing it these last 3 weeks…and I actually planned my meals out next week & am continuing with the no grains! And for the workouts, I reaaaaaaally loved the Strength ones! I surprised myself by really pushing and upping the weights that I used. The Speed workouts are tough, but I know you can do it!!
