Sesame Cucumber Salad

Nick & I have a running joke that I always want to make Asian inspired food, but every time I do I never end up liking it. That was soooo true a year or so ago; I don’t even know why, but anytime I would make an Asian inspired recipe (whether it was a stir fry, Mongolian Beef, Paleo Orange Chicken, etc) I would get sooooo excited for it because it would look so good in the recipe I referenced….and then I would take one bite and absolutely HATE IT. Yet, I would still keep trying similar new ones. I’m persistent if nothing else, right?

But I’m finding now that I’m getting better at knowing the Asian inspired flavors that I like and the ones I don’t, so it’s muchhhhh easier to put something together on my own than to try to mimic a recipe with ingredients that I already know I’m not a huge fan of…no matter how mouth watering the pictures of it look! Though on the other hand, it could just be that my tastes are changing too…take my former gag-reflex reaction to Sushi, and now it’s the one thing that I crave regularly! Have you ever found that even as a adult, your taste buds change and begin to like new things and crave less of the things you used to be obsessed with?!

Either way, I’m happy to report that this ridiculously simple Sesame Cucumber Salad is delicious! And so simple to make. I was happy that I had recently gotten some toasted sesame oil from Trader Joe’s and I still had some rice wine vinegar sitting in my pantry, so I didn’t even need to buy any extra ingredients in order to make it…#winning or #cheap, whichever way you want to look at it is fine by me. Plus, all you gardeners out there are probably experiencing a huge crop of cucumbers right about now, so you’re welcome for the recipe idea so that you can use some of those bad boys up!

Oh, and of course, container counts for whichever Portion Fix program you’re following: 1 green (cukes), 1 tsp(oil/honey).

Sesame Cucumber Salad

A light & refreshing cucumber salad seasoned with sesame oil & rice wine vinegar.

  • 2 cups sliced cucumbers
  • 2 tsp toasted sesame oil
  • 2 tsp rice wine vinegar
  • 1/4 tsp honey
  • 1/4-1/2 tsp red pepper flakes
  • Salt & Sesame Seeds to taste


  1. In a small bowl, whisk together the sesame oil, vinegar, honey & red pepper flakes. Pour over the cucumber slices & mix well to combine. Season to taste with salt & sesame seeds if desired.
