Chili Lime Roasted Broccoli

I’m all about simple side dishes, and typically with dinners I’ll have a carb (sweet potato, regular potato, quinoa, brown rice, etc) and a steamed or roasted vegetable as my sides. I tend to keep it simple, mostly because I just don’t normally have the time to focus on making everything all at once! But sometimes, I crave something beyond just simple roasted or steamed veggies as a side dish…sometimes we all just want a little more flavor in life, right?!

And that’s exactly how this Chili Lime Roasted Broccoli was born! I needed something that was still just as simple as roasting up the broccoli, but I wanted to add a little more flavor than just my typical salt & pepper. And I happened to have some limes, hot sauce & all the seasonings I needed already on hand! So I tossed them with the broccoli, tried a bite…and the rest is history because I’m officially obsessed and not sure if I can ever go back to eating plain, old, regular broccoli ever again! There’s a good spiciness to it, which I really enjoy because I go through periods of time where I wickedly crave spicy foods allllllllll the time. So while this isn’t crazy hot, it does satisfy my craving for spiciness!

It’s also, of course, 21 Day Fix friendly andddd Paleo friendly as well, since Nick & I are combining eating according to the 21 Day Fix and choosing only Paleo options (aka, we’re eating grain & dairy free). Our goal is to do this up until Thanksgiving (because, duhhhh, I need ALL the foods on Thanksgiving!) to give our bodies a nice reset so that our energy levels go up and we feel less blah…I’m sure y’all can relate to that feeling at some point! So everything I’m cooking this month is going to be Paleo friendly. If it’s not, I give you all permission to publicly shame me because this girl is determined to stick with it. Then I’ll give myself a couple days off to enjoy Thanksgiving goodness, including deserts and leftover turkey sandwiches, and then I plan to get myself right back on track with portioning out my food and keeping things Paleo friendly! I am determined to feel my best this holiday season, so I’m not letting anything stand in the way!

But enough of my rambling (which I know y’all secretly missed), let’s get you this Chili Lime Roasted Broccoli recipe, shall we?!

Can you tell me the serving size for the broccoli. Thank you!

    1. Hey Rachel!

I typically count 1 cup of veggies as 1 serving since I follow the 21 Day Fix food guide and one green container (veggies) is the equivalent of 1 cup!!
