Yeah, I’m aware that Thanksgiving just happened and that it’s almost December…so you might think that coleslaw has absolutely no place on my blog this time of year. But I was craving coleslaw and so I freaking made myself coleslaw, and you know what? It was awesome! I mean, let’s be realistic, the bags of pre shredded coleslaw mix pretty much make life complete and they’re always available at the grocery store for you…that’s what I used! If you feel the need to be super awesome though, you can always just shred up your own cabbage/carrots and make your own coleslaw mix. I’ll be thoroughly impressed with your dedication if you so choose to do that! But for me, the pre-bagged stuff just made the most sense and made it possible for this awesome side dish to come together in just a few minutes!
And why in the winter did I choose to add mango & jalapeno into my coleslaw? Because I’m a badass. True story. But I actually found a super ripe & juicy mango at the grocery store and wanted to use it in something…so I came up with this! But if you’re not having much luck finding a ripe mango when you go shopping, you can totally just grab a bag of frozen mangoes and let some thaw out and use that in this recipe instead! That’s why I looooove that frozen fruit is so readily available…and often times you can get organic frozen fruit (and veggies for that matter) for much cheaper than the organic fresh variety!
For the dressing for this coleslaw, I used a mix of homemade mayo & Greek yogurt, but if you don’t have any homemade mayo on hand and still want this recipe to be clean, you can use all Greek yogurt and add in a splash of red wine vinegar to give it that extra little kick along with the lime juice too!
I served this Mango Jalapeno Coleslaw as a side dish to go with some roasted salmon, but it honestly ended up stealing the show! I will most definitely be making it again in the very near future…regardless of how cold it is outside!
Mango Jalapeno Coleslaw
A sweet & mildly spicy coleslaw
- 1 bag coleslaw mix
- 2 Tbs homemade mayo
- 2 Tbs plain Greek yogurt
- Juice of 1 Lime
- Salt & pepper to taste
- 1 ripe mango, peeled & diced
- 1/2-1 jalapeno, seeded & minced
In a bowl, whisk together the mayo, yogurt & lime juice
In a larger bowl, combine the coleslaw mix, diced mango & minced jalapeno. Pour the dressing over the top & mix well to combine. Season to taste with salt & pepper and allow to stand and marinate for at least 10 minutes or overnight in the fridge.
