Roasted Red Pepper & Garlic Salmon

Guys, I have a confession to make…I LOVE cooking (I know, duhhhh), but I hate cleaning up afterwards. I always try to do dishes as I go so that after I finish making my meal I have less that I need to clean, but that doesn’t always go as planned either. One thing that I do is always use aluminum foil to line any baking sheets. That way it makes clean up sooooo much easier because normally I can just take the aluminum foil off the pan and it’s already clean. Or even if something somehow got through the aluminum foil and onto the pan, clean up is sooooo much easier than having lots of burnt on leftovers on there. You guys feel me, right? So anyways, my whole point to that was that anytime I can use aluminum foil or other stuff to make clean up easier, I’m always game. And I was coming up with recipes to make for the week and scrolling through Pinterest for inspiration and I got the idea to foil wrap my salmon to make both cooking and cleaning even easier!

The idea is so simple…you add the salmon, some veggies and aromatics into the foil, wrap it up tight and it all pretty much steams itself in the little foil packet! You can’t get much better than that, my friends. Plus, it means you can also cook it on the grill without risking your salmon falling apart on ya! I baked mine in the oven because it was too cold outside for me to have any desire whatsoever to grill, but you’d better believe that once warmer weather rolls back around I’ll be making this again!

This Roasted Red Pepper & Garlic Salmon is Paleo & 21 Day Fix friendly…woohoo! And ridiculously easy to make as well, which is always a winner in my book. And it has sooooo much flavor packed into it! I counted it as 1 red for the salmon, 1 green for the pepper and 1 tsp for the butter! I’m definitely going to be playing around with more foil wrapped meals soon. And it’s great because you can make as little or as much as needed and even wrap everyone’s up individually so that if someone in your family wants to switch up the seasoning or even add a different vegetable, they can totally do that! I chose to serve mine with some simple roasted sweet potato slices and sauteed kale and it was the perfect light but satisfying dinner!

And even though this dish looks & feels super summery, it’s honestly awesome at any time of the year. And the fact that it comes together so quickly and makes clean up a breeze makes it PERFECT for this holiday season as well!! So I hope that you try it out soon and let me know how you like it!

Roasted Red Pepper & Garlic Salmon

Fresh salmon, sliced red pepper & garlic roasted together in aluminum foil.

Ingredients

  • 1/2 lb fresh salmon filet (no skin)
  • 1 large red bell pepper, sliced
  • 4 cloves garlic, minced
  • 2 tsp grass-fed butter
  • Salt & pepper

Instructions

  1. Preheat oven to 400 degrees. Lay half of the sliced red pepper on a sheet of aluminum foil. Top with the salmon, season with salt & pepper and the butter. Then lay the garlic and the rest of the sliced peppers on top.

  2. Wrap the foil around the salmon & veggies, making sure to crimp the ends of the foil together to form a packet so that the steam doesn't escape while cooking.

  3. Roast at 400 degrees for about 20 minutes, or until salmon is cooked through and peppers are tender.
