Sweet & Smoky Chicken

There aren’t many things in life that are better than a simple chicken marinade that takes less than a minute to throw together and helps impart sooooo much flavor into a meal…am I right, friends?! And this Sweet & Smoky Chicken definitely fits the bill for that! It’s literally like 5 ingredients (not including salt) and all I did was measure it all out, stir it up and pour it over chicken to marinate for the day while I was at work…and by the time I got home, we were ready to cook the chicken and enjoy!


Nick & I are focusing on eating only Paleo friendly foods (aka we have cut out grains & dairy) for a while to give our bodies a nice reset since we got a little off track over the summer and beginning of Fall! Between having so much going on this summer and having a week of vacation in October, our tummies have not been happy campers. But after only a couple weeks of eating Paleo (and still sticking with my 21 Day Fix portion containers!), I already feel a million times better. I have so much more energy and waaaaay less bloating…and that, my friends, is a win!

But I’m rambling, so back to the real point I was trying to make…this chicken is totally Paleo friendly! Woohoo! Considering all that’s in it is tomato paste, maple syrup, liquid smoke and some seasonings, you can’t really get much more simple than that! And the sweetness of both the tomato paste and the maple syrup is a perfect complement to the smokiness of the liquid smoke and smoked paprika. For real, the flavors in this cannot be beat! And you absolutely must try this for yourself!

I chose to cook mine by pan searing the chicken breasts in some coconut oil since it was a cold day and neither Nick or myself wanted to man the grill outside! Buttttttt, if it’s a nice day wherever you are and you want an excuse for some fresh air, feel free to grill the chicken as well…it’ll be just as delicious, if not more so! If you’re planning to grill it though, add a tablespoon or 2 of oil into the marinade and oil the grill grates before you cook, otherwise your chicken is gonna stick like crazy to your grill since the sugars in the maple syrup will caramelize. And that would leave you with burnt, sticky chicken…and ain’t nobody got time for that!

Sweet & Smoky Chicken

Chicken marinated in a mixture of tomato, maple syrup & spices.

  • 1 heaping Tbs tomato paste
  • 2 Tbs pure maple syrup
  • 1/8 tsp liquid smoke
  • 1/8 tsp smoked paprika
  • 1/4 tsp sea salt
  • 2 boneless chicken breasts (4 oz each)
  • 1 Tbs coconut or avocado oil


  1. In a bowl, whisk together the tomato paste, maple syrup, liquid smoke, paprika & salt. Pour over the chicken and let marinate 8 hours or overnight.

  2. Heat a saute pan over medium heat and add in the oil. When the oil is hot, add the chicken and saute for about 4 minutes per side or until fully cooked through.
